Bell pepper pie

Ingredients
- 1 package alfa's kihi country style pastry sheet
- 3 bell peppers (1 red, 1 green, 1 yellow) cut into thin slices
- 2 medium size onions
- 1 garlic glove
- 1 carrot
- 100 g feta cheese, crumbled
- 100 g graviera cheese, grateds
- 1 egg
- 2 tablespoons yogurt
- 1 tablespoons fresh or dried thyme
- olive oil
- salt, pepper
Execution
- Preheat the oven to 190°C and grease a 32x22 cm baking pan.
- Melt the onions, carrot and garlic in the food processor.
- Sauté the bell peppers and melted vegetables in a pan with a little olive oil over medium heat for 10-15' until the peppers are soft
- Put the sauteed vegetables, egg, cheeses, yogurt, thyme, a little salt and pepper in a bowl and mix well to mix the ingredients
- Spread the first sheet on the pan and drizzling it with olive oil. Repeat with two more sheets, drizzling them with olive oil in between.
- Add the filling and spread it well everywhere.
- Cover the filling with the fourth sheet and drizzle it with olive oil as well. Finish by putting the last two sheets, drizzleing them with olive oil in between.
- Cut as much sheet as is protruding from the rim of the pan and turn the rest towards the inside of the pie.
- Grease well everywhere with a little more olive oil, score the surface of the pie slightly with a knife and bake for 45-50' until the pie is golden.
