Easy minced meat pie

Ingredients
- 1 pack of alfa “so easy” filo pastry
- 500 g minced beef
- 3 tbsp. olive oil
- 2 dry onions cut into thin slices
- 1 ripe and firm tomato cut into thin slices
- 2 tbsp. parsley finely chopped
- 1 egg
- 2 tbsp. strained yoghurt
- 200 g crumbled feta cheese
- 150 g grated kasseri
- salt
- freshly ground pepper
Execution
For the easy minced meat pie, first heat the olive oil in a frying pan over medium-high heat. Simmer the minced meat for about 5 minutes until it turns golden and its color has changed completely. Add the onions and allow to simmer over medium heat for 4-5 minutes. Add salt, pepper and parsley and remove the pan from the heat. At this stage the filling should be completely dry. Allow the minced meat to cool slightly. In a bowl, stir together the egg, the yoghurt and add the grated cheeses. Finally, add the minced meat and stir all the ingredients. Remove the oiled and crinkled filo sheets from the freezer. Lay out one filo sheet, cover with the filling in one layer, add tomato slices on top, place another filo sheet on top and place the pan in the oven at 180°C on fan-assisted mode on the middle rack. Bake for about 45 minutes until the pie turns golden. Allow to seat for 10 minutes and then serve.
